Cooking without meat, fish or dairy products is more on our culinary radars then ever. Nut roast with chestnut mushroom sauce (makes for great leftovers too), Korean pan-fried tofu with crunchy vegetables, a Middle Eastern spiced aubergine and tomato salad.
