If you want to eat less meat or make it go further or are trying to reduce your shopping bill, this class is a good place to start. The programme covers advice on how to buy meat and where it fits into a good diet, the key home-cook butchery skills, all cooking methods and will give you some lovely bits to take home. You will learn to make:

5 meals out of one chicken: 

- a chicken liver paté 
- chicken breasts stuffed with mascarpone, lemon & rosemary
- chicken thighs wrapped in bacon
- spicy chicken wings
- chicken broth 

Lambs liver, Venetian-style
Braised oxtail, shin & cheek 

All classes include tastings throughout and supper. You are welcome to bring your own wine, beer or other drinks. All recipes cooked by you or demonstrated will be sent on to you by email following the class.
